Weight Scale Part 1 (High Resolution A/D Conversion and GUI)

hi all:
this high resolution weight scale gui built arduino uno , processing 1.5.1. have been playing high resolution before in of previous projects; nothing this. using same 10 bits a/d converter arduino resolve 1024 different voltage values in 0-5v interval, system resolving 100000 different voltage values in interval (in grams scale), corresponds 5/100000= 5 microvolts voltage steps. result quite stable video shows. neither amplification nor hardware noise reduction techniques in use. pot directly connected arduino a0  input. in other scales (units) resolution greater (shown end of video). achieve resolution, of course, overall frequency response of system had drastically reduced , total response time slow. in general, has slow moving variable tolerate this. tried add dithering; there no noticeable effect, either because doing wrong or because there enough noise present in signal. don't have clear answer on yet. in previous projects data collected logged directly excel (shown @ end)
i'm working on real version using real weight (bridge) sensor , instrumentation amplifier. still making final adjustments. performance near 1 , had reduced resolution 1 order of magnitude obtain acceptable results.
i used project improve gauges gui had built , graph useful in many future projects, arduino , processing awesome.

let me emphasize noise big problem , work has kept under control @ right level. noise , there instability , errors. drastic reduction of frequency response helps reducing noise; on other hand reduces response time. delicate trade off.
