Ultrasonic thickness testing with Arduino

i totally new arduino , i'd thoughts , advice on project i'm considering.

i have seen numerous projects building ultrasonic range finder arduino used time delay between initial ultrasonic pulse , sound being reflected object.   in case of ultrasonic thickness gauges,  ultrasonic pulse sent through transducer held in direct contact object being measured , time takes sound reflected transducer converted distance.   it seems me real difference between ultrasonic range finder , thickness gauge type of transducer used.

thickness gauge transducers relatively cheap compared price of instrument (which can run thousands of dollars decent unit) , wondering if type of thing can done relatively inexpensive arduino.  thickness gauge transducers operate on frequency of either 5 mhz or 7 mhz 5 mhz being popular.  using measure thickness of steel plate , need resolution of 0.001".  speed of sound in carbon steel 0.23  inch/µsecond , able measure need able time pulses between pulses precision of 0.002 µsecond.  measurements typically taken 20 times per second.

is within capabilities of arduino?  model suggest, , can provide feedback on feasibility of this?  appreciate help!

directly resolving 2 nanoseconds on device cycle time of 62.5 nanoseconds tough call.
an arduino might able control external hardware measurement, , provide means of displaying result, not make measurement itself.
